About the Author
Barbara Beery combined her natural talents for cooking and teaching to create Batter Up Kids, a children's cooking school, in 1991. She has a bachelor's degree in elementary education from the University of Texas, and spent 13 years teaching 2nd and 3rd grades and pre-school children ages 3 to 5 years.

Rainbow Confetti Parfait
Ingredients List
2 cups milk
1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla
1 tablespoon butter
Assorted food coloring
Whipped cream and rainbow sprinkles for garnish
Colored mini marshmallows for garnish
Makes 4
In a medium saucepan over medium heat, heat milk until bubbles form around the edges. In a bowl, combine sugar, cornstarch, and salt. Pour sugar mixture into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, and stir in vanilla and butter. Divide pudding equally into three bowls and tint each portion with a different food coloring. Color one pink, one green, and one yellow. Divide evenly among parfait glasses, layering each pudding color. Cover and chill at least 2 hours before serving.
Garnish with a dollop of whipped cream and rainbow sprinkles.

- Reviewed in the United States on May 25, 2008This is a lovely children's cookbook. Yes, it's fairly small, but it has 30 recipes--I wasn't expecting the Joy of Cooking for children or anything. My daughter wanted a fairy birthday party, and I used a number of the recipes--they were all delicious, and I saw more that we'll be trying in the future. I particularly liked the Magic Bonbon Cookies and the cupcakes decorated like mushrooms. What I also really like about the book is that you can have spring/summer or fall/winter themed recipes--nice, depending on what time of year your child's birthday is.
The recipes lean more heavily towards sweets, but there are savories in there as well. I think the book is especially appealing since kids love tiny food. The recipes would be fun to liven up an ordinary rainy-day tea party as well.
I recommend this one and am planning to order the Mermaid one as well!

I have 4 granddaughters, I got this one for my youngest granddaughter, she will be 4 in 2 mo. I have the Pink Princess (got it 5 years ago and my oldest granddaughter is 3 recipes short of completing the whole book), The Green Princess Book, and The Mermaid Cook Book. These books have made wonderful memories for each of my granddaughters and me.

Great for cooking with kids and SUPER GOOD & SIMPLE recipes without fancy ingredients! The pixie cakes are almost like crepes just a little thicker (kids & husband love them!) Finally just decided to buy the book so we can return the copy to the library for others to enjoy. A must have for those Little Fairy Princesses!!

Love this book, it's filled with beautiful pictures while the recipes are simple enough for non-cooks to follow. I found many inspiring ideas for my daughter's bday party, and will be reaching for it again for her next birthday.
